Homemade Bone Broth Recipe

Two options, cook on the stove top for 24 hours at a simmer or cook in an Instant Pot for 4 hours under pressure.
Chicken bones – (roast an organic chicken, consume all the meat)
2 Carrots chopped into 1 inch pieces
2 Celery stalks chopped into 1 inch pieces
1 Onion quartered including the skin
1 tbsp. apple cider vinegar
Add enough water to completely cover the bones (4-5 quarts)
Optional – add spices, chicken feet (adds more collagen)
Place all ingredients into a pot, add vinegar and let sit for 45 minutes (extracts additional minerals from the bones). Simmer for 24 hours or under pressure for 4 hours. When completed, discard all the ingredients, pass through a metal mesh strainer into quart mason jars. Makes approximately 5 quarts. Freeze jars that may not be used immediately.
