Guilt free, super healthy and so enjoyable, the following recipe is an example of how to simply incorporate raw cacao (chocolate in its raw form) into your diet. Raw cacao can be purchased in most local grocery and health food stores. No cooking, as this will destroy the beneficial enzymes and naturally occurring vitamins. This high anti-oxidant food can easily be added to smoothies, raw cookies or as a simple breakfast drink.
Raw Cacao (Chocolate) Fudge
Makes 25 1-inch pieces Time to Set: 1 hour (refrigerator) OR 20 minutes in freezer
Ingredients: ½ tsp. vanilla ½ tsp. sea salt
¼ c maple syrup
¼ c honey ½ c coconut oil 1 ¾ c cashew butter 4 tbs. cocoa powder
Directions: 1. Place all ingredients in a food processor, blend.
2. Line an 8”x 8” glass baking dish with parchment paper. Pour the fudge mixture into the baking dish. Refrigerate until set – about 1 hour.
3. Lift the fudge out of the dish using the edges of the parchment paper and set onto a cutting board. Cut the fudge into squares. Store leftovers in the refrigerator or freezer.
